Usually for one drive, when you saved those sheets on your desktop you likely enabled the syncing/saving. So they are saving to a folder that's being synced.

Excel for iPad is an excellent iOS spreadsheet app. The touch UI is well thought out, and support for the full set of functions from the desktop apps means you can work on even complicated. To use Excel, Word, PowerPoint, OneNote, OneDrive on an iPad Pro you need an MS Office 365 paid subscription. Non pro-model iPads do not, but MS, in their infinite wisdom (😢) require one to edit documents in MS Office apps on an iPad Pro.

Excel for iPad also includes a special numeric keyboard option (so does Apple’s Numbers spreadsheet app). If most of your time in spreadsheets is spent entering numbers, this will be a real boon. Construct formulas in an Excel worksheet to compute the data you so carefully and painstakingly entered in cells on your iPad. Constructing a formula is a matter of doing these tasks: Tell Excel which cells to use in the computation. Tell Excel how to compute the data in the cells by using operators or a function. Or on your desktop, see where those files are being saved to as a default. I think microsoft 'helpfully' has one drive as the default save to place, unless you choose to go to your local documents folder.

As to editing the sheets, check out Documents to Go. I know a version is paid, there may be a free version, but it's been years since I got it. It works seamlessly with microsoft documents and even better, there is no annual sub, buy it once and it's yours.
